Once in nursing school, while studying nutrition, I realized that even a varied diet might lead to severe deficiencies in essential nutrients. A significant red flag for me was calcium. Calcium is deposited in our bones like money in a bank. When you are young, calcium deposits quickly, but as you age, this process slows down significantly. Insufficient calcium intake leads to the body withdrawing calcium from the bones without adequate replacement, resulting in bone diseases.
This revelation triggered further research. After many years, I finally figured out how to create a meal plan that fulfills our needs for nearly all essential nutrients. This ensures that all the nutrients our bodies need are available. Adjusting the type and amount of food takes considerable time, but I believe it’s worth it.
